Tasting Note

Fresh, mineral-driven Chardonnay: green apple, pear, Meyer lemon, white flowers, almond skin and brioche; creamy mid-palate from oak, precise acidity and a stony, lingering finish.


Food Pairing

Western: grilled scallops, lobster, roasted chicken, creamy pasta, Brie or goat cheese. Asian: miso-glazed cod, tempura prawns, sushi (fatty fish), Thai coconut/green curry with fish.


Production Method

Hand-harvested; long pressing; native-yeast fermentation; élevage 12 months in 350L demi-muids (≈20% new oak), followed by ~6 months in tank before bottling.
