Tasting Note
Crisp citrus, green apple and lemon peel with wet-stone minerality, subtle white peach and toasted-almond notes. Refined, saline texture, bright acidity and a long, elegant mineral finish.

Western: lobster, scallops, roast chicken with cream sauce, mushroom risotto, soft cheeses (Brie, Camembert). Asian: yuzu- or miso-glazed fish, sashimi/sushi, tempura, steamed white-fish with ginger-soy, seafood hotpot.
Production Method
Hand-harvested Chardonnay, whole-cluster pressing, indigenous-yeast fermentation in 350L barrels, ~12 months élevage in barrel (c.25% new), then ~6 months in stainless steel; minimal bâtonnage.

Domaine Bachelet-Monnot was founded in 2005 by brothers Marc and Alexandre Bachelet. The domaine farms ~22 ha in the Côte de Beaune, using organic/sustainable practices and parcel-by-parcel vinification.
