Tasting Note
Citrus, green apple and white flowers with wet limestone minerality, bright acidity and a finely textured, persistent finish. Subtle spice and oyster-shell notes develop with age.

Production Method
Long press, native-yeast fermentation in 350L barrels, ~12 months élevage (limited bâtonnage), then several months in stainless tanks before bottling. Low yields and minimal intervention.
