Tasting Note

Crisp, mineral-driven Chardonnay with lime, green apple, white flowers, wet limestone, light apricot and toasted-almond notes. Precise acidity, saline chalky minerality and a long, focused finish.


Food Pairing

Western: lobster, scallops, grilled/roasted white fish, roasted chicken with cream sauce, mushroom risotto, soft cheeses. Asian: sushi and sashimi, miso-glazed cod, tempura, grilled eel (unagi), creamy coconut/lemongrass Thai dishes.


Production Method

Hand-harvested fruit; whole-cluster press, indigenous-yeast fermentation in 350L barrels; élevage ~12 months in 350L oak (≈20% new) followed by ~6 months in tank; malolactic fermentation and minimal SO2; sustainable/organic practices.

Domaine Bachelet-Monnot, founded 2005 by brothers Marc & Alexandre Bachelet. Small, high-quality holdings in Puligny including a ~0.4–0.5 ha Folatières parcel of ~40–50-year-old vines; low yields and terroir-driven winemaking.
