Tasting Note

Mid-weight Burgundy with bright red and dark cherry, brambly black fruit, bay/undergrowth notes, a subtle ferrous edge, fresh acidity and silky texture with gentle grip and a long, savory finish.

Food Pairing

Western: roast duck, coq au vin, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu pork, miso-glazed aubergine, shiitake mushroom stir-fry, mildly spiced Korean BBQ.

Production Method

Hand-harvested, ~50% whole-cluster fermentation with indigenous yeasts; maceration and gentle extraction; aged 12–18 months in oak (≈30% new). Minimal-intervention, sustainably farmed viticulture.
