Tasting Note

Bright red cherry, raspberry and wild strawberry with sous-bois, pepper and chalky minerality. Medium-bodied, fresh acidity, fine-grained tannins and a long, savory finish with rosehip and subtle spice.

Western: roast duck, beef bourguignon, mushroom risotto, pork tenderloin. Asian: Peking duck, char siu, teriyaki chicken, stir-fried mushrooms with soy, pork bulgogi.


Production Method

Hand‑harvested Pinot Noir; indigenous-yeast fermentations. 2021 vinified with little/no whole-bunches, matured ~12 months in 228L barrels (~25% new). Sustainable viticulture, minimal intervention.
