Tasting Note
Pale gold; citrus, pear and white-flower notes with brioche, lanolin and flinty/mineral salinity. Precise, fresh acidity and a sapid, stony finish (elegant, terroir-driven).

Western: oysters, scallops, grilled/roasted white fish, beurre blanc, roast chicken, mild hard cheeses (Cantal, Comté). Asian: sushi/sashimi, steamed fish with ginger & scallions, miso-glazed cod, tempura, Vietnamese spring rolls, light Thai seafood curry.
Production Method
Hand-harvested; long press and native-yeast fermentation in 350L barrels (≈20% new). Aged ~12 months in barrel then ~6 months in stainless steel; minimal bâtonnage.
