Tasting Note

Lemon and white‑flower aromatics with pear, orange zest and a stony, saline minerality. Creamy mid‑palate, subtle toasted-almond/oak spice and a precise, citrus-rind finish with gentle spice.

Western: roast chicken with herb butter, grilled lobster or scallops, creamy mushroom risotto; Asian: miso‑glazed cod, soy-ginger sea bass, salmon or seared-tuna sushi, vegetable tempura.


Production Method

Hand-harvested Chardonnay from multiple limestone parcels; native-yeast fermentation and élevage in 350L French oak (c.20–25% new) for 12 months, followed by ~6 months in stainless steel; limited bâtonnage.
