Tasting Note

Fresh red cherry, raspberry and cranberry with floral violet lift, light underbrush and subtle spice. Medium-bodied, chalky texture, fine acidity and a slightly bitter, saline finish.

Roast chicken, duck breast, pork loin, mushroom risotto, charcuterie and soft cheeses; Asian: yakitori, teriyaki chicken, miso-glazed salmon, ramen with pork, grilled shiitake and Korean BBQ (pork or chicken).


Production Method

Blend of parcels from Puligny, Maranges and Hautes-Côtes. 20–25% whole-cluster fermentation, indigenous yeasts, concrete/steel ferments, 10–12 months in barrel (mostly used), minimal new oak.
