Tasting Note
Fresh lemon, pear and green apple with leesy, vanilla and subtle reductive notes. Medium-plus body, chalky minerality and citrus rind, finishing bright, dry and persistently sapid.

Western: roasted chicken, grilled salmon, lobster with beurre blanc, chèvre and creamy pasta. Asian: sushi/sashimi, tempura, miso-glazed cod, light Thai fish or seafood dishes.
Production Method
Fruit from Puligny and Chassagne; long press, fermented with indigenous yeasts in 350L/700L barrels (≈20% new). Aged ~12 months in barrel and ~6 months in tank; sustainable/organic practices.
