Tasting Note

Crisp citrus, green apple and pear with chalky minerality, subtle grapefruit rind, light smoky/phenolic 'bacon fat' note and a slightly waxy finish.

Western: roasted poultry, grilled lobster or scallops, creamy pasta, Brie or goat cheese. Asian: sushi/sashimi, tempura, miso-glazed fish, steamed ginger fish, light Chinese stir-fries.


Production Method

Hand-harvested Chardonnay; partial whole-pressing, indigenous-yeast fermentation in 350L/700L barrels (≈20% new), ~12 months oak ageing then tank rest. Domaine practices pre-oxidation and low-intervention/organic viticulture.
