Pungent tropical aromatics of passionfruit, lantana and grapefruit with lime zest and nettle. Juicy palate shows blackcurrant, mandarin and green tropical fruits, finishing with flinty minerality and a crisp, lingering spice note.
Food Pairing
Western: oysters, ceviche, grilled prawns, goat cheese, lemon-herb roasted chicken. Asian: sushi and sashimi, Vietnamese fresh spring rolls, Thai green papaya salad, steamed fish with ginger and scallion.
Production Method
Grapes picked from Babich estates, crushed and pressed; juice fermented in stainless-steel tanks at varied temperatures to preserve aromatics. No malolactic fermentation, lightly fined and bottled.
