Tasting Note

Perfumed tropical-citrus nose of passionfruit, lime, gooseberry and blackcurrant leaf with herbal boxwood. Mid-palate shows honeydew, grapefruit and mineral spice; soft, textured mouthfeel with a lingering citrus-spice finish.


Food Pairing

Western: oysters, grilled prawns, ceviche, goat cheese, fresh salads, roast chicken. Asian: sushi/sashimi, Thai green curry, Vietnamese spring rolls, mild chicken korma.


Production Method

Mostly cool stainless-steel fermentation with a small portion in old oak barriques; ~15% malolactic fermentation; clarified with plant proteins and bottled under screwcap.
