Tasting Note
Dark cherry, raspberry and plum with sweet spice (nutmeg/cinnamon), subtle cedar and cocoa, soft textured tannins and a juicy, persistent finish.

Production Method
Crushed to open-top vats, fermented with minimal plunging (some wild and commercial yeasts), left on skins after fermentation for tannin integration, matured in oak barrels and lightly fined.
