Tasting Note
Ripe black cherry and plum with cassis, dark spice, cocoa and vanilla. Medium‑full, smooth texture, fine tannins and a long, slightly mentholated finish with mineral and toasted oak accents.

Food Pairing
Western: grilled lamb chops, roasted beef, aged Manchego, chorizo, mushroom risotto. Asian: Korean BBQ (bulgogi), Japanese teriyaki or yakitori (chicken/beef), char siu, Cantonese roast duck, beef and mushroom hotpots.

Production Method
Hand-harvested Tempranillo; cold stainless steel fermentation with extended maceration; aged ~22 months in primarily French oak barrels, followed by bottle ageing before release.
