Tasting Note
Deep cherry-red with violet hues. Intense aromas of ripe red and black fruit, dried rose petal, licorice, cedar and dark chocolate. Palate is expressive, structured and balanced with fine tannins, bright acidity and a long, spicy, mineral finish.

Food Pairing
Grilled or roasted beef, lamb chops, venison, aged Manchego, mushroom risotto; Asian: Korean BBQ (bulgogi), Chinese roast duck, Sichuan beef, teriyaki/char siu pork.

Production Method
Hand-harvested from old vines; fermentation in 1,800L tanks with two remontados/day, maceration 28+ days; malolactic in 500L French oak; aged 15–17 months in 500L French oak barrels (1º–3º use).
