Tasting Note
Yellow straw with golden highlights. Aromas of white flowers, pear, citrus and light brioche; creamy palate with butter, toasted oak, balanced acidity and a long, saline finish.

Food Pairing
Western: roast chicken, grilled scallops, buttery seafood, creamy pasta, aged Manchego. Asian: sushi and sashimi, tempura, miso-glazed fish, mild Thai curries, yakitori.

Production Method
Fermented and aged 10–12 months on fine lees in French oak barrels (multiple coopers), followed by a minimum of 24 months bottle ageing before release.
