Tasting Note
Perfumed rose and violet notes with tar, candied orange peel, cherry, blackberry and licorice. Powerful, high-acid framework with tightly woven, velvety tannins and a long mineral, saline finish.
Food Pairing
Western: roast pheasant, braised beef, mushroom risotto, truffle dishes, aged Pecorino or Parmigiano. Asian: Peking duck, char siu, Korean barbecue (galbi), braised shiitake and soy-braised beef.
Production Method
Hand-harvested Nebbiolo; ~25 days fermentation/maceration in stainless steel, full malolactic fermentation; aged ~32 months in large French oak botti (110hL) and bottled after extended bottle ageing (Riserva).
