Tasting Note
Bright cherry and pomegranate with dried plum, violet and Mediterranean herbs; subtle vanilla, coffee and tobacco notes. Medium–full-bodied, refined chewy tannins, lively acidity and a long, savory finish.
Food Pairing
Western: roasted lamb, bistecca alla fiorentina, pappardelle al ragù, mushroom risotto, aged Pecorino. Asian: Korean bulgogi, Peking duck, char siu, spicy Sichuan beef, teriyaki-style grilled chicken.
Production Method
Estate-grown Sangiovese from organic/biodynamic vineyards; ~20–30 day maceration, fermented (native/selected yeasts), aged about 18 months in Slavonian oak botti, barriques and tonneaux, then bottled and cellared.
