Tasting Note
Deep amber, intense caramel, dried fig and candied orange with walnut, honey and toasted almond notes. Lush, very viscous palate balanced by bright acidity and a long, spiced, slightly bitter almond finish.

Western: cantucci/almond biscotti, panforte, blue cheese, foie gras, crème brûlée. Asian: mango sticky rice, sweet red-bean mochi, sesame balls, mooncakes, mildly spiced Chinese desserts.
Production Method
Grapes air-dried (appassimento) on racks, fermented with native yeasts and aged oxidatively for ~10 years in small oak casks on the 'madre' (natural yeast) before bottling.

Avignonesi, historic Montepulciano estate (Nobile family origins), now owned by Virginie Saverys; practices organic/biodynamic viticulture and produces traditional Vin Santo using a centuries-old madre yeast.
