Tasting Note
Deep amber; aromas of dried fig, candied orange, honey, toasted almond and nutmeg. Viscous, concentrated palate of dried fruits, caramel and marzipan with bright balancing acidity and an extremely long, nutty finish.

Western: almond cantucci, biscotti, blue cheese (Gorgonzola), foie gras, crème brûlée, aged cheeses, nut-based desserts. Asian: honey/soy-glazed or teriyaki duck, Peking duck, mooncakes, mango sticky rice, sesame desserts, sweet salty Chinese pastries.
Production Method
Grapes are hand-harvested, air-dried (appassimento) on mats, gently pressed; must ferments slowly in small oak "caratelli" with indigenous "madre" yeast and ages 10+ years in casks.

Avignonesi, historic Montepulciano estate (family name back to 16th century). Known for traditional Vin Santo production; biodynamic practices introduced under owner Virginie Saverys (acquired 2009).
