Tasting Note
Black cherry, plum jam, blackberry, black tea, rhubarb and graphite with cardamom, coconut and black pepper on the finish; silky texture, medium–full body and fine, polished tannins.

Food Pairing
Western: Bistecca alla Fiorentina, roast beef, braised short ribs, mushroom risotto, game. Asian: Korean bulgogi, teriyaki beef, char siu, Szechuan-style beef or lamb skewers.

Production Method
Fermented with indigenous yeasts in stainless-steel vats (25–30 days) with daily pump-overs; matured ~18–24 months in 225L oak barriques. Produced organically/biodynamically.
