Tasting Note
Explosive bouquet of cherry and plum jam, black tea, rhubarb and graphite with cardamom, coconut and black pepper. Full, enveloping palate with juicy fruit, silky linear tannins and a long savory finish.

Food Pairing
Western: grilled or roasted red meats, braised lamb, game, stews, aged cheeses. Asian: Peking duck, Korean BBQ (bulgogi), char siu, Szechuan beef, beef teriyaki.

Production Method
Crushed and fermented with indigenous yeasts in stainless-steel vats (25–30 days) with daily pump-overs/punchdowns; aged ~24 months in 225L oak barriques.
