Tasting Note
Intense cherry, ripe raspberry and redcurrant with floral notes and wild strawberry. Viscous, dense and vibrant on the palate with marasca/amarena fruit and persistent, slightly chalky tannins; fresh-sweet finish typical of amphora-aged Sangiovese.

Food Pairing
Western: grilled lamb, roast beef, pork chops, tomato-based pasta, pizza, soft/mild cheeses. Asian: Korean BBQ, char siu (roast pork), yakitori/teriyaki chicken, tomato-based Sichuan dishes, grilled miso pork.

Production Method
Wild-yeast fermentation with ~10% whole clusters in 13 Tuscan terracotta amphorae; ~30 days maceration, manual punch-downs and ~90 days (≈3 months) aging in amphora.
