Tasting Note

Ripe apricot, Williams pear and vineyard peach with toasted hazelnut, spice, saline minerality and subtle iodine. Creamy lees-driven texture from oak, bright acidity and a long, persistent, savory finish.

Western: grilled lobster, scallops with butter, meaty/firm white fish, seafood stews, roasted chicken, creamy cheeses. Asian: Pulpo a la Gallega, miso-glazed black cod, sushi (fatty tuna/salmon), Thai seafood curry, Cantonese steamed fish.


Production Method

Hand-harvested Albariño; spontaneous fermentation in 228L and 500L French oak barrels; 12 months ageing on fine lees with regular bâtonnage; fined with isinglass and tangentially filtered. Organic viticulture.

Attis Bodegas y Viñedos — family-owned winery in Meaño (Val do Salnés). Works old pergola vineyards (many >40 years) on granitic soils; modern cellar operations since 2012; focused on organic practices.
