Tasting Note
Fine, creamy mousse with aromas of white peach, citrus, brioche, oyster shell and mushroom. Palate shows lemon curd, honeyed pastry, pear and saline minerality, finishing long, dry and intensely focused.
Food Pairing
Oysters, sashimi/sushi, tempura prawns, lobster rolls, roast chicken, creamy pasta, soft cheeses, caviar, Asian seafood dishes (steamed fish, sushi), light fried dishes.
Production Method
Traditional method (méthode traditionnelle) with ~6 years tirage on lees, very low dosage (~2 g/L); initial oak influence from base wines, extended lees ageing for complexity.
Vineyard Info
Produced by House of Arras under winemaker Ed Carr, Tasmania’s leading sparkling specialists; internationally awarded and focused on long lees ageing and multi‑site fruit sourcing.
