Tasting Note

Layered aromas of hazelnut, truffle, glazed quince and toasted brioche; palate shows nougat, honeycomb, desiccated lemon, grilled pineapple and subtle spice, with creamy texture, fine persistent mousse and a long saline finish.

Western: oysters, lobster, scallops, creamy mushroom risotto, roast chicken, aged parmesan. Asian: sushi/sashimi, tempura, Peking duck, truffle dim sum, Cantonese roast pork. Complements both shellfish and umami-rich dishes.

Methode Traditionnelle (traditional method); extended lees ageing in tirage (~14 years), disgorged March 2021, low dosage (~2.6 g/L); base wines see limited oak and undergo malolactic for texture.
