Tasting Note
Bright citrus and green apple with white peach, jasmine, brioche, toasted almond and oyster-shell minerality; vibrant acidity, fine bead, creamy autolytic texture and a very long saline finish.
Food Pairing
Fresh oysters and sashimi; steamed or tempura prawns; lobster and crab; roast chicken with creamy sauce; soft triple-cream cheeses; dim sum and lightly spiced Thai seafood dishes.
Production Method
Traditional method (méthode traditionnelle). Primary fermentation in stainless steel (88%) and new French oak barriques (12%), full malolactic fermentation, ~7 years lees ageing; disgorged with a low dosage (~3 g/L).
