Tasting Note
Bright golden straw with an ultrafine bead. Aromas of seaspray, jasmine, grapefruit, lemon curd and fresh pastry. Rich, citrus-driven palate with lanolin, truffle oil, cashew, saline umami and a creamy, very long dry finish.

Oysters and raw shellfish, sashimi/sushi, ceviche, steamed fish with ginger & scallion, tempura prawns, grilled scallops, roast lemon chicken, creamy seafood pasta, light Chinese seafood dishes (steamed fish), salty soft cheeses.
Production Method
Méthode traditionnelle (bottle fermentation). Gentle whole-bunch pressing; fermentation on light lees with 100% malolactic conversion, some barrel-fermented components, aged 8–9 years on lees, low dosage (~4–4.7 g/L); disgorged Apr 2018.
