Tasting Note
Fine persistent bead; aromas of brioche, nougat, lychee, sea spray and forest floor. Palate shows nectarine, natural yoghurt, butter‑sautéed mushroom and fresh oyster with creamy mousse and a long chalky-saline finish.

Fresh oysters, seafood platters, smoked salmon, creamy poultry dishes, soft cheeses; Asian: sushi/sashimi, tempura, dim sum, Thai seafood and mild curry dishes.
Production Method
Traditional method (Champagne-style) with secondary bottle fermentation and extended lees ageing (c. 30 months), disgorged, blended and rested before release.
