Tasting Note

Ripe cherries and wild berries with rose petal, spice, orange rind and subtle smoke. Full-bodied, concentrated and vibrant with ripe, fine-grained tannins and a long, saline-tinged finish.


Food Pairing

Western: roast lamb, beef bourguignon, duck breast, mushroom risotto. Asian: Peking duck, char siu, miso-glazed black cod or salmon, Korean bulgogi, shiitake-based dishes.


Production Method

Hand-harvested; ~50% whole-cluster fermentation with indigenous yeasts; gentle extraction; aged 16–18 months in oak (approx. 50% new); minimal fining/filtration.

Produced by Arnaud Mortet of Gevrey-Chambertin; continuing the Mortet family legacy. Practising organic viticulture on small, high-quality parcels including a northern Charmes plot; run with sister Clémence since 2016.
