Tasting Note
Concentrated dark cherry and plum with Mediterranean herbs, licorice, cocoa, tobacco and sweet spice; powerful, ripe tannins and a long, savory finish.

Food Pairing
Roasted or braised lamb, beef stews, game, aged Pecorino and cured meats; Korean BBQ, Peking duck, Sichuan-style beef, teriyaki or char siu pork, rich Japanese curry.

Production Method
Hand-harvested native varieties, separate fermentations, ~16–18 day maceration; aged 18–24 months in new French oak barriques, then 12–14 months in bottle.
