Tasting Note
Fresh, medium-bodied Vermentino with ripe peach, apricot, citrus and white‑flower aromas, saline‑mineral core, bright acidity and a long, savory finish.

Western: seafood antipasti, linguine allo scoglio, seafood risotto, grilled white fish, roast chicken, medium‑aged cheeses. Asian: sashimi/sushi, Thai seafood curry, Vietnamese seafood noodle soups, steamed fish with ginger and scallions, Japanese tempura.
Production Method
Very soft pressing; only free‑run juice used. Cooled to 10–12°C, decanted and fermented in stainless steel at 16–17°C for 25–30 days. Small fraction ferments and ages in small French oak barrels; aged on fine lees.
