Tasting Note
Pale salmon-pink; delicate wild red berries, white flowers and Mediterranean maquis. Fresh, saline palate with light phenolic grip and a medium, clean finish.

Food Pairing
Western: fresh cheeses, seafood pasta, fish soup, salumi, grilled white meats. Asian: sushi/sashimi, grilled prawns or yakitori, Thai seafood salad, Vietnamese fresh spring rolls, light noodle soups.

Production Method
Very short maceration on skins, soft pressing, decanting and fermentation in stainless steel at 16–18°C for about three weeks; bottled young.
