Tasting Note
Golden-amber; intense aromas of candied apricot, honey, dried fig and Mediterranean herbs. Lush, opulent and velvety on the palate with bright minerality and a very long, sapid finish.
Food Pairing
Western: aged pecorino, almond cookies, amaretti, seadas with honey, foie gras; Asian: mango sticky rice, sesame balls, sweet red-bean mochi, honey-glazed roast pork or spiced baklava-style desserts.
Production Method
Late-harvest / passito (stramature) from Nasco and Malvasia. Gentle pressing, slow fermentation at 22–25°C; fermentation is stopped leaving high residual sugar; aged in barriques then bottle.
