Tasting Note
Golden yellow with amber highlights. Intense aromas of candied apricot, quince, honey and Mediterranean herbs; soft, rich and sweet yet balanced by sapid minerality and lively acidity; long, spicy finish with toasted almond and cinnamon notes.
Food Pairing
Western: aged pecorino or blue cheese, almond biscotti, seadas, dried-fruit tarts, honeyed desserts. Asian: mooncakes, mango sticky rice, Chinese almond cookies, sweet red-bean desserts, mildly spiced coconut desserts.
Production Method
Hand-harvested overripe grapes; soft pressing; slow fermentation at 22–25°C in stainless steel; approx. 12 months evolution in French barriques and further bottle ageing.
