Tasting Note
Golden-yellow with amber reflections; intense aromas of candied apricot, honey and Mediterranean herbs. Rich, rounded and almost sweet on the palate with sapid‑mineral core, toasted-oak spice and a very long finish.
Food Pairing
Western: almond cookies, amaretti, seadas, aged cheeses, figs, toasted almonds, dry pastries. Asian: mango sticky rice, sesame balls (jin deui), red-bean pastries, mooncakes, and also with moderately spicy Szechuan or Thai dishes where sweetness balances heat.
Production Method
Grapes left to overripen on the vine, soft pressing, slow fermentation at 22–25°C in stainless steel, followed by maturation in French barriques and further bottle aging.
