Tasting Note
Intense peat smoke, bonfire ash and incense with lavender and vetiver; dark fruit and salted-caramel sweetness from port influence, smoked nuts, mint chocolate and leather; long, smoky, saline finish.

Food Pairing
Western: grilled lamb, smoked brisket, blue cheese, dark chocolate, salted caramel desserts. Asian: grilled mackerel or smoked eel (unagi), Korean BBQ, char siu, miso-glazed aubergine, spicy Sichuan dishes.

Production Method
Married single malts matured in ex-bourbon barrels and first-time ex-port (225L) barriques; non-chill filtered, natural colour; NAS; bottled at 46% ABV.
