Tasting Note
Explosive peat smoke with smoked bubblegum and toasted sourdough, bright tropical esters (pineapple/peach), muscovado sweetness, creosote, anise and clove; creamy mouthfeel and very long bonfire-ember finish.

Food Pairing
Western: smoked salmon, blue cheese, charred steak or BBQ brisket, dark chocolate desserts. Asian: grilled unagi (eel), miso-glazed black cod, yakitori, Korean BBQ, aged soy or miso dishes, kimchi-accented sides.

Production Method
Experimental high-gravity mash (less water, more grist), fermented and distilled in pot stills, matured in ex-bourbon casks; non-chill filtered, natural colour, NAS.
