Fresh sour cherry, red plum and rosehip with wild herbs, damp earth and saline nuances. Silky, chalky texture with fine tannins, lively acidity and a long, savory, slightly spicy finish.
Food Pairing
Beef bourguignon, roasted duck breast, wild mushroom risotto, grilled salmon, pork belly, char siu, miso-glazed eggplant, teriyaki salmon, Korean bulgogi, aged cheeses (e.g., Gruyère, aged goat).
Production Method
Hand-harvested fruit from Chilhué vineyard. Fermented 10–18 days in stainless steel (25–28°C) with ~15% whole clusters; aged ~11 months in French oak (about 15% new) with some foudre/concrete influence.
