Tasting Note
Austere yet expressive: grapefruit and orange peel, white flowers, wet-stone minerality, hints of hazelnut and vanilla from oak, creamy texture, vibrant high acidity and a long, elegant smoky finish.

Food Pairing
Grilled scallops, lobster with citrus-butter, roasted white fish, creamy seafood dishes; sushi and sashimi, tempura prawns, steamed Cantonese-style fish, miso-glazed cod, light Thai seafood salads.

Production Method
Hand-harvested, gentle pressing and long cold clarification; fermented in new 400L French oak barrels, aged ~9 months with bâtonnage on the lees and circa 12 months bottle ageing before release.
