Tasting Note
Complex, austere nose of wildflowers, hay and wet stone; hazelnut and vanilla from oak. Palate shows refreshing acidity, verticality, saline and smoky notes with a long, elegant finish.

Food Pairing
Western: grilled sea bass, scallops, lobster, lemon-roast chicken, creamy pasta. Asian: sashimi/sushi, ceviche, Thai prawn salad, lightly spiced Vietnamese/Chinese seafood dishes.

Production Method
Hand-harvested; gentle whole-destemmed pressing, long cold clarification; fermented and aged nine months in new 400‑L French oak barrels with bâtonnage on the lees; 12 months bottle aging.
