Tasting Note
Fresh, saline-driven white with lemon, white peach and hawthorn, floral and herbal lifts, crisp minerality, textured mid-palate and a long citrus-tinged finish.

Western: grilled seabass, shellfish, goat cheese, roast chicken; Asian: sushi and sashimi, steamed fish with ginger & scallions, tempura, Vietnamese fresh rolls.

Production Method
Hand-harvested, cold-controlled stainless-steel fermentation with indigenous yeasts and short lees contact for texture; minimal or no new oak.
