Tasting Note

Light ruby; aromas of cherry, violet and red berries with peppery spice, smoked/tobacco notes. Fresh, elegant tannins, earthy savoury character and a medium-length, red-fruit finish.


Food Pairing

Western: roast pork/FILET MIGNON, veal, rabbit terrine, roasted chicken, mushroom pasta. Asian: duck pancakes/carbonnade, char siu or hoisin pork, grilled salmon teriyaki, mushroom ramen, yakitori.


Production Method

Organically farmed fruit; stainless-steel fermentation with maturation in tank and part oak barrel ageing (Marigny-Neuf cuvées use cuve and fût; PN1328 had ~11 months in barrel).
