Tasting Note

Very fine, persistent mousse with green apple, citrus zest, brioche and almond notes; bright minerality and crisp acidity, dry and refreshing with a clean, saline finish.

Production Method

Méthode traditionnelle (secondary bottle fermentation), extended lees ageing (c.18–36 months), organic viticulture, low SO2 and occasional solera blending for consistency.

Ampelidae founded by Frédéric Brochet (1995). Organic (Ecocert) estate based at Château des Roches near Marigny‑Brizay, farming extensive calcareous/flint soils in the Vienne.
