Tasting Note
Bright lemon, white-peach and pear with wet-stone minerality, saline sea-spray notes, subtle spicy/vanilla oak and creamy lees texture; lively acidity and a long, tangy, saline finish.
Food Pairing
Western: lobster bisque, seared scallops, sea bass, seafood paella, roast chicken with herbs. Asian: sesame-crusted tuna, miso-glazed black cod, sushi/sashimi, lightly spiced Thai coconut dishes, tempura.
Production Method
100% Chardonnay; fermented and aged ~12 months in French oak (c.18% new; remainder second/third use), lees-aged for texture, restrained malolactic to preserve freshness.
