Bright, crystalline yellow with aromas of white flowers, pear, citrus and flint; chalky lemon and green-apple on the palate, vibrant acidity, creamy texture and a saline, long mineral finish.
Food Pairing
Western: seared tuna with sesame, grilled sea bass, lobster bisque, seafood paella, scallops, salmon-stuffed ravioli, roasted Cornish game hen. Asian: sushi/sashimi, miso‑glazed cod, teriyaki salmon, Thai coconut prawn curry, sesame tuna.
Production Method
Hand-harvested Chardonnay from Quebrada Seca; barrel-fermented and aged ~12 months in French oak (≈18% new), minimal malolactic to preserve freshness, light lees contact for texture.
