Tasting Note
Blackberry and black cherry with thyme, rose petal, cardamom and sumac; mocha and licorice notes over slate minerality. Fresh acidity, balanced round tannins, medium-bodied with a persistent, savory finish.

Food Pairing
Roasted lamb, grilled beef, BBQ ribs, charcuterie and aged cheeses; Asian pairings: Korean BBQ, char siu, spicy Sichuan beef, teriyaki pork, grilled mackerel.

Production Method
Malolactic completed; aged ~12 months in new and second‑use 225L French oak barrels; bottled largely unfined.

Paul Hobbs partnered with local viticultor Antonio López at Alvaredos in Ribeira Sacra, working steep terraced, old‑vine sites to revive indigenous varieties.
