Tasting Note
Deep red with scarlet rim. Shows black fruit, stewed plum, cherry blossom, cocoa, sandalwood, vanilla and balsamic spice; warm, full-bodied, lively acidity and pliant yet present tannins with a long oaky finish.

Western: roast lamb, beef stew, pork shoulder, grilled vegetables, aged cheddar. Asian: Korean BBQ (bulgogi), char siu/roast pork, Peking duck, mildly spicy Szechuan beef or braised eggplant.

Production Method
Hand‑harvested, rigorous grape selection, small stainless‑steel tank fermentations, gentle basket pressing; aged 16 months in French and American oak (≈80% new, 20% second‑use) with malolactic fermentation.
