Tasting Note
Concentrated black and blue fruit (blackberry, kirsch, cassis) with dark chocolate, toasted spice, floral lift and meaty undertones. Powerful, polished palate with ripe tannins, fresh acidity and a long, mocha-tinged finish.

Food Pairing
Roasted lamb, grilled beef, braised short ribs, mushroom risotto, aged Manchego; Asian: Korean BBQ (galbi), Chinese char siu or braised beef, spicy Sichuan dishes, teriyaki beef, rich yakitori.

Production Method
Hand-harvested, vineyard selection; small-batch fermentation with triage and gentle basket pressing. Aged ~24 months in new oak (primarily French) before bottling.
